The Hidden Harvest


Today marks the International Day of Awareness of Food Loss and Waste. At Galor, our philosophy has always been rooted in a deep respect for ingredients. We believe that true culinary creativity isn't just about what you cook, but how mindfully you utilise what you have.

Whether you employ a private chef or love cooking for your family, you don’t need professional training to make a meaningful impact in your own kitchen. Often, the most nutrient-dense and flavourful parts of our everyday produce are the pieces we habitually toss into the compost bin.

To mark today’s global initiative, here are a few simple, chef approved ways to embrace root to stem cooking and unlock the hidden potential on your cutting board:

Carrot Tops:

Those feathery green fronds attached to fresh carrots are completely edible and packed with vitamin C. They possess an earthy, slightly peppery flavour profile. Swap out traditional basil and blend them with olive oil, garlic, and pine nuts for a vibrant, zero-waste pesto.

Broccoli & Cauliflower Stalks:

Most of us snap off the florets and discard the thick, heavy stalks. In reality, the stems are actually sweeter and crunchier than the tops. Simply peel away the tough outer layer and slice the tender centre into matchsticks for a crisp slaw, or roast them alongside the florets.



Beetroot Greens:

If you buy fresh beetroot with the leafy tops still attached, you are essentially getting a free bunch of greens. Belonging to the same family as Swiss chard, they are rich in vitamins A and K. Wash them thoroughly and sauté gently with olive oil and garlic, just as you would spinach.

Herb Stems & Onion Skins:

The woody stalks of parsley, thyme, and rosemary, along with the papery skins of onions and garlic, hold an immense amount of latent flavour. Keep a dedicated freezer bag for these off-cuts. Simmered down, herb stems release concentrated oils, while onion skins give homemade stocks and broths a beautiful, deep mahogany colour.

Reducing food waste doesn't require a radical lifestyle overhaul, it simply starts with looking at our ingredients a little differently. By embracing the whole plant, we not only reduce household waste but also discover entirely new flavours.
